Directions
- Clean and chop all vegetables and herbs and place in large bowl.
- Toast bagels and roughly chop into 1"cubes.
- In a small dry skillet over medium heat, toast pine nuts for 2-3 minutes, stirring frequently until golden and fragrant. Remove from heat and set aside.
- In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, oregano, and a pinch of salt and pepper to create the dressing.
- Add chopped bagel cubes, olives, crumbled cheese, and nuts to bowl of veggies.
- Pour dressing over mixture and toss. Serve immediately.
Tips:
• If making ahead, do not add bagels until ready to serve.
• For extra crunch, toast bagel cubes in the oven at 350°F for 5-7 minutes after toasting to fully crisp them, preventing sogginess when tossed.
• Add a squeeze of lemon juice for extra flavor.
• Swap or add fresh herbs like basil for extra Mediterranean flavor.
