Directions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine pumpkin purée, sweetener, spices, vanilla, and almond milk. Stir until smooth.
  3. Divide mixture evenly into 6 greased ramekins (about ½ cup filling each).
  4. In a separate bowl, combine Carbonaut granola, chopped pecans, and melted coconut oil. Toss to coat.
  5. Sprinkle topping evenly over each ramekin.
  6. Place ramekins on a baking sheet and bake for 20–25 minutes, until filling is set and topping is golden and crisp.
  7. Cool slightly before serving. Enjoy warm with coconut whipped cream or sugar-free vegan ice cream.
