Ingredients
Directions
- Pre-heat your oven to 350°F.
- Process granola in food processor then place in large mixing bowl.
- Add flour, chia seeds, and cocoa, then combine well.
- Mix nut butter, almond milk, maple syrup and vanilla.
- Add wet ingredients to dry and mix with fork until well combined.
- Grease mini-cupcake tray with coconut oil.
- Drop a large spoonful of batter into greased tray cups and press down lightly with fingers.
- Bake for 10 minutes.
- Remove from oven and let cool for 5 minutes before removing from pan and placing on cooling rack.
Tips:
- If you don’t have a mini muffin pan, try dropping spoonfuls directly onto lightly greased cookie sheet.
- If you don’t want to grease the cookie sheet, you can use parchment paper.
- Use whatever unsweetened nut butter you have on hand.
- Any plant-based milk alternative would work.
- Try cashew!
