Directions
- Pre-heat your oven to 350°F.
- In a medium-sized bowl, combine the shredded protein, jalapeño, and ½ cup enchilada sauce.
- Assemble the enchiladas by filling each tortilla evenly with the shredded protein and sauce mixture.
- Add 1 tablespoon of shredded cheese to each.
- Roll the tortillas tightly to close and place in oiled 8x8 baking dish seam side down.
- Dot the remaining 1 cup enchilada sauce over the tortillas and sprinkle with the remaining ½ cup of shredded cheese
- Bake for 20 minutes until the cheese is melted.
- Serve immediately and garnish with all your desired toppings.
Tips:
- Prepare ahead of time and keep in the refrigerator for up to two days.
