Directions

  1. Pre-heat your oven to 350°F.
  2. In a medium-sized bowl, combine the shredded protein, jalapeño, and ½ cup enchilada sauce.
  3. Assemble the enchiladas by filling each tortilla evenly with the shredded protein and sauce mixture.
  4. Add 1 tablespoon of shredded cheese to each.
  5. Roll the tortillas tightly to close and place in oiled 8x8 baking dish seam side down.
  6. Dot the remaining 1 cup enchilada sauce over the tortillas and sprinkle with the remaining ½ cup of shredded cheese
  7. Bake for 20 minutes until the cheese is melted.
  8. Serve immediately and garnish with all your desired toppings.

Tips:

  • Prepare ahead of time and keep in the refrigerator for up to two days.
