Spring has officially sprung, and Carbonaut is wasting no time in reinventing our favorite low carb, fresh, spring-type meals. In honor of next month’s Cinco de Mayo, we’re presenting Low Carb Vegan Carne Asada Tacos!
Using quality and colorful ingredients, this yummy recipe is sure to be a total hit with everyone—and there’s a whole galaxy of ways to make it your own. From choosing between wheat and gluten free tortillas, adding additional toppings, and deciding whether to eat one or four, we’re teasing your taste buds with Mexican flavor and fun.

Ingredients
- Carne Asada Seasoning Mix
- Tacos
- Additional Low Carb Taco Toppings (optional)
Directions
- Prepare seasoning in a medium sized bowl.
- Add vegan steak strips to seasoning and mix to coat.
- Heat a medium sized frying pan to medium heat. Add avocado oil.
- Sauté onion for 1-2 minutes, until pale yellow and fragrant.
- Add steak strips to pan and sear briefly on all sides until hot.
- Build your tacos by layering steak strips with onion and cilantro on tortillas.
- Add additional toppings (optional).
- Squeeze lime over top and consume immediately with a napkin you’re not afraid to destroy.
