- Pre-heat your oven to 375°F.
- Whisk together dry ingredients in a large bowl: Carbonaut baking mix, cornstarch, baking powder, baking soda, and salt.
- With a mixer, cream cold butter until fluffy, about 1-2 minutes.
- Add in sugar replacer and beat for an additional 2 minutes.
- Pour in egg mixture and mix until just combined.
- Add flour mixture ⅓ at a time until well combined, scraping down the sides as needed.
- Mix in chocolate chips until combined throughout dough.
- Scoop dough to form 15 cookie balls and add to a parchment lined baking tray.
- Bake for 13-15 minutes until you see the bottom edges turning brown. Allow to cool for 5 minutes before transferring to a cooling rack.
