  1. Preheat the oven to 350°F and grease a 9x13 baking dish with coconut oil.
  2. Place the bread cubes in the greased baking dish and set aside.
  3. In a large bowl, combine eggs, milk, yogurt, maple syrup, cinnamon, and vanilla. Pour evenly over the bread cubes.
  4. Top with chopped nuts.
  5. Bake in the preheated oven for 45-55 minutes, or until a knife inserted in the center comes out clean.
