Vegan Peach Bread Pudding

If you’re a bread pudding fan, this quick and easy recipe will be the perfect addition to your table! This version is made with fresh peaches, but if they aren’t in season, substitute frozen or canned peaches.

  1. Pre-heat your oven to 350°F.
  2. Whisk everything together in a bowl EXCEPT bread, let sit for a few minutes.
  3. Use cooking scissors to cut up bread, add to the bowl, and toss.
  4. Divide mixture between 6 ramekins or muffin tin.
  5. Add a little more of the Just Egg and sprinkle with a little cinnamon & nutmeg.
  6. Bake for 15-20 minutes.

Tip:

  • Add some chopped pecans or walnuts at the same time as the chopped bread for a nutty twist.
