Directions
- Pre-heat your oven to 350°F.
- Cut zucchinis lengthwise, place on a clean kitchen towel, and sprinkle both sides with salt. Place a paper towel on top to help absorb the moisture and set aside.
- Grease a 9x13 inch casserole or baking dish with oil.
- Layer zucchini, ricotta, spinach, mushrooms, and marinara sauce.
- Repeat this three times and top with vegan mozzarella on the final layer.
- Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes or until the sauce is hot and bubbly.
- Let the lasagna sit for at least 10-15 minutes to allow it to firm up.
- While waiting, change oven to low broil setting.
- Combine vegan butter, garlic powder, and dried oregano, then spread evenly on Carbonaut bread.
- Place bread on baking sheet and broil on low for 2-3 minutes (careful not to let burn).
- Remove from oven and serve with lasagna.
