Low Carb Plant Based Lasagna with Garlic Toast

Directions

  1. Pre-heat your oven to 350°F.
  2. Cut zucchinis lengthwise, place on a clean kitchen towel, and sprinkle both sides with salt. Place a paper towel on top to help absorb the moisture and set aside.
  3. Grease a 9x13 inch casserole or baking dish with oil.
  4. Layer zucchini, ricotta, spinach, mushrooms, and marinara sauce.
  5. Repeat this three times and top with vegan mozzarella on the final layer.
  6. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes or until the sauce is hot and bubbly.
  7. Let the lasagna sit for at least 10-15 minutes to allow it to firm up.
  8. While waiting, change oven to low broil setting.
  9. Combine vegan butter, garlic powder, and dried oregano, then spread evenly on Carbonaut bread.
  10. Place bread on baking sheet and broil on low for 2-3 minutes (careful not to let burn).
  11. Remove from oven and serve with lasagna.
