- Preheat oven to 375°F. Cut each slice of bread into 3–4 smaller pieces. Lightly brush with olive oil and toast on a baking sheet for 8–10 minutes, or until golden and crisp.
- In a bowl, combine chopped tomatoes, olive oil, balsamic vinegar, salt, pepper, and chopped arugula. Toss gently to mix.
- Spoon tomato mixture onto toasted bread.
- Top with crumbled vegan feta and fresh basil. Serve immediately.
- Serve immediately while crisp.
