Sweet & Spicy Low Carb Crusted Cauliflower Bites

Friends, these cauliflower bites are to die for. They’re simple to make, very low carb, and are SUPER visually appealing. (Like, if you need to contribute to a potluck, bring these.)

Pair with your favorite hot sauce or don’t; these guys taste incredible on their own. Triple the recipe or divide it in half—it’s up to you and your tummy.

  1. Boil cauliflower florets in water until just barely tender (about 5 min) and drain well. Set aside until cool enough to handle.
  2. Preheat oven to 425°F. Coat the baking sheet with non-stick cooking spray and set aside.
  3. Combine mustard, maple syrup, cayenne pepper and oil in small jar and seal with lid. Shake well, then set aside.
  4. Toast bread until very dry and there is no moisture. Tear bread apart and toss into food processor. Add nutritional yeast, parsley, lemon zest and pepper.
  5. Process a few seconds until mixture resembles seasoned panko breadcrumbs.
  6. Brush the tops of cauliflower with mustard mixture, then press florets into bread crumb mixture.
  7. Arrange bread crumb-side-up on prepared baking sheet.
  8. Bake until breadcrumbs are brown and cauliflower is tender, or about 15-20 minutes.
  9. Add a sprinkle of paprika for extra color and enjoy!

Tips:

  • Use lime zest instead of lemon if that’s what you have on hand.
  • Omit the cayenne or add more—it’s up to you and your spice threshold.
  • Line baking sheet to assist with cleanup!
  • If you don’t own a food processor, use a quality blender instead. (We used a Vitamix!)
